My friends have asked me to publish some recipe of typical Slovenian cousin on our internet site, and finally I decided to do it. I hope that collection will become bigger and bigger during time…



PLUM DUMPLINGS

Narva, 13. 10. 2009

Ingredients:

-       1 kg of cooked and mashed potatoes,

-       400 g flour,

-       100 g of butter or margarine,

-       1-2 eggs,

-       plums (one for each dumpling - app. 1 kg),

-       salt.

Preparation: Cooked, still warm, potatoes, we peel, mash, add salt, butter or margarine, eggs, and mix well. Then we leave everything to cool. After that we add flour and knead dough just to mix it with flour, not more! From plums we remove pits and replace them with half a sugar cube
(or small spoon of sugar), and wrap into potato dough - it should not be too thick.

Cooking: First we make an experimental cook of dumpling. We place one into salted boiling water and cook approximately 15 minutes - depend on size of dumpling. After we tasted experimental dumpling we see, if we need to cook them longer or shorter time. We take cooked dumplings from water and pour them with breadcrumbs roasted in butter or oil.

Alternative 1: We can make dumplings from cottage cheese - instead of potato we take 500 g of cottage cheese. We mix cottage cheese with butter, salt, eggs and semolina (we add it by feeling – it must be still slightly), we let it stand for at least half an hour so that semolina can soak up. After that we add flour and make dumplings.
We cook as mentioned before.


Alternative 2: Instead of plums we can use other fruits, usually apricots, we can use also jam.
